Which blends are caffeine free?

Plenty of them. Use the caffeine free filter in the builder and it will show only those, so you can build a whole box the kids can drink at seven in the evening.

How do I steep them?

Hot: one sachet in eight ounces of water just off the boil, about 212°F, for five minutes. Iced: steep strong and pour over ice, or cold-brew a pitcher in the fridge overnight.
